High-Protein Vanilla Overnight Rice Pudding

Using cooked, chilled rice allows you to enjoy a creamy, sweet treat with a better blood sugar profile. The protein from the Greek yogurt and fiber from the chia seeds are perfect balancers.

Ingredients

  • 1/2 cup cooked white or brown rice chilled overnight
  • 1 cup unsweetened almond milk coconut milk or dairy milk
  • 1/2 cup Greek yogurt
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Sweetener to taste e.g., a few drops of liquid stevia or 1 tsp maple syrup per serving
  • Toppings Optional: Berries, chopped walnuts (protein/fat), or a sprinkle of extra cinnamon.

Instructions

  • Prep the Starch: Cook rice as usual (this can be done the day before for another meal). Refrigerate the cooked rice overnight.
  • Assemble the Pudding Base: In a medium bowl, whisk together the milk, Greek yogurt, chia seeds, vanilla extract, cinnamon, and sweetener.
  • Fold in Rice: Fold in the chilled rice. The mixture will look runny but the chia seeds will thicken it.
  • Chill & Thicken: Divide the mixture into two small jars or bowls. Cover and refrigerate for at least 2 hours, or until the chia seeds have fully thickened the pudding (you can also just leave them overnight again until you are ready to eat!).
  • Serve: Serve cold. Top with fresh berries and nuts for added fiber and crunch.
